Grilled Mushrooms

A mushroom is ninety per cent water, and the whole trick is to drive that off rather than stew it. So: whole caps, strong heat, no salt until the end and very little oil. The garlic oil goes in at the last minute — get garlic onto coals any earlier and it burns, turning everything bitter.

Ingredients

  • What to use instead

A spoon of balsamic instead of lemon juice makes them deeper and slightly sweet.

Makes: a platter for 4

Method

  1. Step 1: Prepare the mushrooms

Don't rinse them under the tap — wipe them with a damp cloth. Twist out the stalks and keep the caps whole.

  2. Step 2: Brush with oil

Brush the caps on both sides with one spoon of the oil. No more than that: the mushroom soaks it up and then fries in what it has.

  3. Step 3: Grill rounded side down

Lay them on a well-heated grate, rounded side down, and grill for 6 minutes without touching them.

  4. Step 4: Turn

Turn them gill side up and give them another 5–6 minutes. Juice collects in the caps, which is exactly what you want.

  5. Step 5: Make the garlic oil

Mix the remaining oil with crushed garlic, salt, pepper and lemon juice.

  6. Step 6: Dress

A minute before they are done, spoon a little oil into each cap. Let it sizzle, then take the mushrooms straight off the heat.

  7. Step 7: Serve

Scatter with chopped parsley and serve hot — cooled mushrooms lose half their aroma.

Tips & variations

  • Tip

Salting early is the classic mistake: salt pulls out water and the mushrooms steam instead of browning.

  • Variation

Large oyster mushrooms or portobellos work the same way, just add 2 minutes a side.

  • Storage

They keep 2 days in the fridge; chop the leftovers into a salad or onto bruschetta.

  • Swap

A spoon of balsamic instead of lemon juice makes them deeper and slightly sweet.
