Kefir-Marinated Chicken Skewers
Kefir does something to chicken thighs that neither vinegar nor mayonnaise manages: it softens the fibres without turning the surface chalky, so the meat stays juicy even if the skewers sit a minute too long. The marinade is deliberately plain — kefir, plenty of onion, black pepper. Four hours is enough, overnight is better.

Method

Step 1: Cut the meat
Cut the thighs into roughly 4 cm pieces — smaller ones dry out, larger ones stay raw in the middle. Leave the skin on: it tightens over the fire and holds the juices in.

Step 2: Grate the onion
Grate or blitz two onions to a pulp — it is the juice that does the work. Cut the other two into thick 1.5 cm rings for the skewers.

Step 3: Mix the marinade
Combine the chicken with the onion pulp, kefir, pepper and paprika. Add the salt only now, not earlier: salt pulls out juices if the meat stands in it for hours.

Step 4: Let it rest
Cover and refrigerate for at least 4 hours, ideally overnight. Take it out 30 minutes before grilling — fridge-cold meat cooks unevenly over coals.

Step 5: Thread the skewers
Thread the pieces tightly together with a ring of onion between them. Shake off the excess marinade; kefir dripping onto the coals burns and smokes.

Step 6: Grill over coals
The coals should be ashy grey with no flames, the skewers 12–15 cm above them. Grill for 18–20 minutes, turning every 3–4 minutes.

Step 7: Check it through
Cut into the thickest piece: the juices should run clear and the meat should be white to the centre. If anything runs pink, give it another 3 minutes.

Step 8: Rest and serve
Slide the skewers onto a board, cover loosely with foil for 5 minutes, then scatter with dill and serve with lemon.

Tip
Do not put out flare-ups with water — it lifts ash straight onto the meat. Move the skewers aside instead and wait for the flames to die.

Variation
Chicken breast works too, but marinate it for no more than 2 hours and grill for 10–12 minutes: it is leaner and needs less fire.

Keeps 2 days in the fridge. Reheat in a 160 °C oven under foil; a microwave turns the meat rubbery.
