Mushroom and Bacon Skewers
Mushroom and bacon are a natural pair: the mushroom gives up moisture, the bacon gives up fat, and they happen to cook in exactly the same time. The only difficulty is that bacon burns over direct flame. So keep the skewers higher than usual, work over medium coals and turn them more often than feels necessary.

Thinly sliced pork belly works instead of bacon but needs 3 minutes more.

Method

Step 1: Prepare the mushrooms
Wipe the mushrooms with a damp cloth and twist out the stalks. Never rinse them: a wet mushroom won't brown.

Step 2: Season them
Toss the caps with the oil, crushed garlic, paprika and pepper. No salt is needed — the bacon brings plenty.

Step 3: Wrap in bacon
Cut each rasher in half and wrap it around a cap, leaving the ends underneath.

Step 4: Thread
Push the skewer through the point where the bacon overlaps, so it can't unwrap over the fire.

Step 5: Grill over medium heat
Keep the skewers higher than usual, 15–18 cm above the coals: bacon over fierce direct heat burns within a minute.

Grill for 12–15 minutes, turning every 2 minutes, until the bacon is browned and crisp all round.

Step 7: Serve
Slide them off the skewers, scatter with parsley and serve hot.

Dripping fat flares up — keep a cooler zone on the grate to slide the skewers onto.

Tuck a small piece of hard cheese into each cap before wrapping it in bacon.
