Quick Kiwi-Marinated Pork Skewers

Kiwi contains actinidin, an enzyme that breaks protein down faster than any acid. That saves the day when guests are already on their way and the meat is still in its packet: forty-five minutes is enough. It is also the trap, because after two hours the fibres collapse and you get a soft mush no fire can rescue. Here the timer matters more than the recipe.

Ingredients

  • What to use instead

    No kiwi and little time? Use sparkling mineral water and give the meat 2 hours.

Makes: 6 skewers

Method

  1. Step 1: Cut the meat

    Cut the neck into 5 cm cubes. Kiwi softens small pieces far too fast and they won't stay on the skewer.

  2. Step 2: Prepare the onion

    Grate or blitz three onions to a pulp and cut the fourth into thick rings.

  3. Step 3: Add the kiwi last

    Peel one kiwi and mash it with a fork. One is enough for two kilos — with two the meat will definitely fall apart.

  4. Step 4: Mix

    Combine the meat with the onion pulp, oil, pepper and paprika, and only then stir in the kiwi. Start the timer straight away.

  5. Step 5: Marinate for exactly 45 minutes

    Leave at room temperature for 45 minutes, no longer. If you'll be grilling later, move it to the fridge, where the enzyme works more slowly.

  6. Step 6: Salt and thread

    Salt the meat, shake off the marinade and thread tightly, alternating with onion rings.

  7. Step 7: Grill

    Over ashed coals for 18–20 minutes, turning every 3 minutes. This meat cooks slightly faster than usual, so start checking at 15 minutes.

  8. Step 8: Serve

    Rest for 5 minutes, scatter with parsley and squeeze over the lemon.

Tips & variations

  • Tip

    If the meat has sat with kiwi for over two hours, don't put it on a skewer — turn it into patties instead.

  • Variation

    Pineapple works just as quickly, but it also sweetens the meat, so watch the crust.

    This is a same-day recipe: marinating ahead simply doesn't work.
