Pickled Tomatoes

Tomatoes are more delicate than cucumbers, so the worry here is not crunch but intact skins. An ordinary toothpick solves it: a prick near the stem lets the steam out and the tomato does not burst when the boiling water hits it. The marinade is on the sweet side — that is the taste people remember.

Ingredients

For 3 one-litre jars

Makes: 3 jars, 1 l each

Method

  1. Step 1: Choose the tomatoes

Pick firm ones without cracks and of roughly equal size — large and small in one jar heat unevenly.

  2. Step 2: Prick each one

Make 2–3 pricks near the stem with a toothpick. This is the key step; without it the skins split.

  3. Step 3: Pack the jars

Put dill, bay, cherry leaves, garlic and peppercorns at the bottom, then the tomatoes on top, without pressing.

  4. Step 4: First pour

Fill with boiling water to the brim, cover with lids and leave for 15 minutes so the tomatoes heat through.

  5. Step 5: Boil the marinade

Pour the water back into a pan, add salt and sugar and bring to the boil. Add the vinegar after it boils, just before pouring.

  6. Step 6: Seal

Fill with the hot marinade, cover with the lids and stand the jars in a pan of hot water up to their shoulders. Hold them 15 minutes from the boil for one-litre jars, then seal, turn them over and leave to cool.

Tips & variations

  • Tip

Plum tomatoes hold their shape better than fleshy salad varieties — use those for jars.

  • Variation

Half a bell pepper and a ring of onion in each jar make the marinade noticeably more aromatic.

  • Tip

For heat, add one ring of chilli per jar and no more: tomatoes take up heat quickly.

  • Storage

18 months in a cool dark place. Once opened, keep refrigerated and use within a week.
