Greek Salad

A proper Greek salad is all big-cut vegetables, a whole slab of feta on top and a generous pour of olive oil — no lettuce, no feta cubes tossed through everything. It's at its best in summer, when tomatoes taste of sunshine and the juices at the bottom of the bowl practically beg for bread.

Method

  1. Step 1: Cut the tomatoes

Cut the tomatoes into wedges, halving any large wedges so the pieces are roughly 3 cm. Put them in a wide bowl and salt lightly — they'll start releasing their fragrant juice right away.

  2. Step 2: Prep cucumber and pepper

Halve the cucumber lengthways and cut into 1 cm half-moons; if the skin is tough, peel it in stripes. Seed the pepper and slice it into thin rings.

  3. Step 3: Slice the onion

Slice the onion as thinly as you can. If it's very sharp, soak it in iced water for 5 minutes and pat dry — it turns milder and crunchier.

  4. Step 4: Combine the vegetables

Add the cucumber, pepper, onion and olives to the tomatoes, sprinkle with the vinegar and toss gently with your hands or two spoons. Tip into a shallow bowl or onto a platter.

  5. Step 5: Top with feta

Lay the feta on top in one piece and crumble the oregano over it between your fingers to wake up the aroma. Pour over the olive oil, grind on some pepper and serve at once, letting everyone break off feta with their fork.

Tips & variations

  • Tip

Keep tomatoes out of the fridge: at room temperature they're sweeter and far more fragrant.

  • Tip

The juices pooling at the bottom are the best part — have bread ready to mop them up.

  • Variation

Add a handful of capers or a few pickled peppers for an even brighter, saltier salad.

  • Storage

Best eaten right away. The cut vegetables, without salt or oil, keep in the fridge for up to 4 hours.
