Blueberry Varenyky
Blueberries are drier than cherries or strawberries, which makes them easier to work with — as long as you do not sugar them early. Sugar pulls out their juice within minutes and the fruit ends up swimming. Mix everything just before shaping and work fast.

Method
-
Step 1: Make the dough
Scald the flour and salt with hot water, add the oil and knead smooth, as in the basic recipe. Rest it under cling film for 30 minutes.
-
Step 2: Sort the berries
Pick out leaves and any crushed fruit: one burst blueberry leaks more than ten whole ones.
-
Step 3: Roll out first
Roll the dough to 2 mm and cut all the 8 cm rounds in advance, keeping them under a towel. The filling gets mixed only once everything is ready.
-
Step 4: Mix the filling
Just before shaping, combine the blueberries with the sugar, starch and zest. The starch coats each berry and binds the juice once it is inside.
-
Step 5: Work quickly
Put a heaped teaspoon of fruit on each round and crimp twice, pressing dry, flour-free dough together. Work in batches of ten.
-
Step 6: Boil
Slide them into salted boiling water and nudge them off the base. Once they float, cook for 3 minutes; the rim turns translucent.
-
Step 7: Serve
Lift into a bowl, pour over the purple juice left behind in the filling bowl and serve with sour cream.
Tips & variations
-
Tip
Do not thaw frozen blueberries. Toss them with sugar and starch while still icy and shape at once — they barely leak that way.
-
Variation
Half blueberries and half raspberries give a brighter, sharper filling, but use only firm raspberries or it will collapse.
-
Tip
Do not overfill. Berries expand in boiling water and burst a seam that was packed too full.
-
Storage
Freeze raw in a single layer on a board for up to three months. Cook from frozen with 2 minutes added.
