Grill and Skewers

Potato and Pork Fat Skewers

Raw potato on a skewer never works out: the outside chars while the middle stays hard. Parboil it instead, and all that remains over the coals is browning. The salo goes between the pieces, and as it renders, every potato half is basted from top to bottom in its fat.

Ingredients

  • What to use instead

Smoked pork belly works instead of salted fat; use half the salt then.

Makes: 4 skewers

Method

  1. Step 1: Parboil the potatoes

Scrub the potatoes without peeling and boil in salted water for 10 minutes — half-cooked, so a knife still meets resistance.

  2. Step 2: Cool and halve

Drain and let them cool. Cut each one in half: the cut face is what browns.

  3. Step 3: Season

Toss the potatoes with the oil, paprika and pepper so the cut sides carry a thin film.

  4. Step 4: Slice the fat

Cut the salo into 5 mm slices — thinner ones render away completely, thicker ones stay raw inside.

  5. Step 5: Thread

Alternate a potato half with a slice of fat along the skewer, pressing them together.

  6. Step 6: Grill

Over moderate heat, grill for 20–25 minutes, turning every 4 minutes. The fat should render and turn golden.

  7. Step 7: Check

Push a skewer into a potato: it should slide to the centre easily. If not, raise the skewers and give them 5 minutes more.

  8. Step 8: Serve

Salt and scatter with dill at once, while the potatoes are hot and still taking on flavour.

Tips & variations

  • Tip

Use potatoes of one size: mixed sizes on a single skewer cook unevenly.

  • Variation

Slide onion rings between the potatoes — they caramelise in the dripping fat.

  • Swap

Smoked pork belly works instead of salted fat; use half the salt then.

  • Storage

Good only hot: once cold the fat sets and the dish loses all its appeal.
