Chocolate Salami
Chocolate salami is a dessert with a sense of humour: dusted in powdered sugar it really does look like a cured sausage, and every slice reveals a mosaic of biscuits and nuts. We make it with real chocolate and condensed milk, so it sets glossy rather than crumbly. It is handy to keep in the fridge and slice off a round with coffee.

Step 1: Prepare biscuits and nuts
Toast the walnuts in a dry pan for 4–5 minutes until fragrant, then chop roughly. Break the biscuits by hand into 1–1.5 cm pieces — a few crumbs are fine.

Step 2: Melt the chocolate
Melt the chocolate with the butter over a pan of simmering water or in the microwave in 30-second bursts, stirring each time. Stir in the condensed milk and salt to a thick, glossy mixture.

Step 3: Mix everything
Pour the chocolate over the biscuits and nuts and stir until every piece is coated. Leave for 10–15 minutes so the mixture firms slightly and is easier to shape.

Step 4: Shape the logs
Divide the mixture in half and tip onto two sheets of cling film. Shape into tight logs about 5 cm (2 in) thick, wrap and twist the ends like a sweet wrapper.

Step 5: Chill the logs
Refrigerate for at least 4 hours until firm, or freeze for 1 hour.

Step 6: Roll in sugar
Unwrap the logs and roll them in powdered sugar, rubbing it in with your palms so the surface looks like a salami casing. Slice 1 cm thick with a sharp knife.

Tip
Do not crush the biscuits to crumbs: larger pieces give the best pattern when sliced and a pleasant bite.

Swap some of the walnuts for dried sour cherries or cranberries — the red flecks make it look even more like salami.
