Uzvar Dried Fruit Drink
Uzvar isn’t really boiled — it is brought to a boil and then left to steep. The deep colour and thick aroma come from those hours of standing, not from time on the stove. The honey goes into the cooled drink: stirred into it hot, it loses its flavour and becomes nothing more than sugar.

Method
-
Step 1: Rinse the fruit
Rinse all the dried fruit well in warm water, and the pears twice — they always carry the most dust.
-
Step 2: Start with the pears
Cover the pears with cold water, bring to a boil and cook for 10 minutes: they are the toughest and need the longest.
-
Step 3: Add the rest
Add the apples and prunes, bring back to a boil and simmer gently for 8 minutes.
-
Step 4: Add the raisins
Add the raisins and cinnamon, boil for 2 minutes and take the pot straight off the heat — raisins fall apart in no time.
-
Step 5: Steep
Cover and leave the uzvar at room temperature for at least 6 hours, ideally overnight.
-
Step 6: Add honey
Stir the honey into the fully cooled drink, taste, and add another spoon if you like.
-
Step 7: Serve
Strain it or serve the fruit alongside, well chilled. The steeped fruit is good eaten on its own.
Tips & variations
