Horseradish and Beet Relish

This is the relish that sits on the table next to jellied meat and roast pork. Nothing is cooked: horseradish and beetroot are grated raw and the vinegar and salt do the rest. The heat holds for about a month before the root mellows, so there is no point making a lot at once.

Ingredients

  • What to use instead

    With no fresh root, use 150 g of ready grated horseradish with no additives and halve the vinegar.

Makes: 3 jars, 250 ml each

Method

  1. Step 1: Soak the root

    Peel the horseradish and cover it with cold water for 2 hours; it becomes juicier and much easier to grate.

  2. Step 2: Grate the horseradish

    Grate it finely or blitz it with a bag over the bowl. The fumes are fiercer than onion — open a window and keep your face away.

  3. Step 3: Grate the beetroot

    Peel the cooked beetroot and grate it finely. Keep the juice; it carries the colour.

  4. Step 4: Mix

    Combine horseradish and beetroot, add the water, salt, sugar and vinegar, and stir until even.

  5. Step 5: Adjust

    Taste: it should be sharp, salty and slightly sweet. If it is too thick, loosen it a spoonful of water at a time.

  6. Step 6: Jar and rest

    Pack tightly into clean jars, close and refrigerate for 2 days so the flavours settle and the colour evens out.

  • Tip

    Grate by an open window or blitz under a bag: the root's oils hit the eyes far harder than onion.

  • Variation

    Without beetroot this is plain white horseradish — add an extra spoon of sugar to soften the heat.

  • Swap

    With no fresh root, use 150 g of ready grated horseradish with no additives and halve the vinegar.

  • Storage

    A month in the fridge in a tightly closed jar. After that the heat fades, though it stays perfectly edible.
