Berry Smoothie Bowl

A smoothie bowl is a smoothie you eat with a spoon, so thickness is everything. We use berries straight from the freezer and as little liquid as possible, which gives a cold, dense blend like soft-serve that holds up the granola and seeds without them sinking.

    For a vegan version, use coconut or soy yogurt, plant milk and maple syrup instead of honey.

Method

  1. Step 1: Load the blender

    Put the yogurt and milk into a powerful blender first, then the banana, with the frozen berries on top. Having the liquid at the bottom helps the blades catch the frozen fruit.

  2. Step 2: Blend thick

    Blend on high for 40–60 seconds, stopping a few times to push the mixture down towards the blades with a spatula. You want the texture of soft-serve ice cream — thick enough that a spoon almost stands up.

  3. Step 3: Adjust the texture

    If the blades are spinning without catching, add another 1–2 tbsp milk, but no more: a runny smoothie won't hold the toppings and ends up as a drink.

  4. Step 4: Spoon into bowls

    Straight away, divide the mixture between two shallow bowls, chilled in the freezer if you have time, and smooth the top with the back of a spoon.

  5. Step 5: Add the toppings

    Arrange the granola in a strip, scatter over the pumpkin and chia seeds and drizzle with a thin stream of honey. Eat immediately, while it's cold and thick.

Tips & variations

  • Tip

    Frozen banana is the secret to a creamy texture without ice. Slice ripe bananas and keep them in a bag in the freezer so they're always ready.

  • Swap

    For a vegan version, use coconut or soy yogurt, plant milk and maple syrup instead of honey.

  • Variation

    Blend in a handful of baby spinach — the colour stays purple and you'll barely taste it. Or swap some of the berries for frozen mango for a more tropical bowl.

  • Storage

    A smoothie bowl is best eaten at once. Pour any extra into ice-lolly moulds and freeze.
